Abstract

The strengthening of the identity in the professional training of the students of gastronomic services is relevant given its significance from the personal to the universal as an essential component of civics and its relationship with the development of values and / or habits of social coexistence. The use of participant observation, document review, analysis and synthesis to determine the opportunities, strengths, threats and weaknesses of this professional's
training process. It reveals citizen education as one of the ways to integrate the vocational training process with the strengthening of identity as an integrating axis.
